When you are preparing anything for someone with these allergies you absolutely need to scrub down everything in your kitchen! Utensils, pans, bowls, kitchen aids, ovens, counter tops, etc.It is essential because even though you're not using flour, there are dust particles in the air that settle down and many can include flour! Scary right!?
I like to use Tapioca starch to help strengthen the flour substitutes you normally use to replace them. There are a couple of store bought flour blends you can buy, most of them by Bob's Red Mill are wonderful! However there are other ways to make your own flour blends. So try this recipe below using Bob's Red Mill 1 to 1 Gluten Free AP Flour:
2 Sticks Butter
1/4 Cup Sugar
12oz Flour (2 cups)
Cream the butter and sugar together, scrape the bottom of the bowl and cream until pale in color.
Add in egg and vanilla and scrape down the bowl, continuing to cream until well combined.
Add in salt and 1 to 1 flour and mix until combined.
Roll out tp 1/2" thickness and cut into desired shapes! Have some fun with it!
Bake at 350 for 8-10 minutes, they will be pale!
